Job overview

- Manage all aspects of one or more full-service food and beverage outlet(s) on a daily basis and coordinate special events. Ensure compliance with standards of service and operating procedures.

- Adhere to local regulations concerning health, safety, or other compliance requirements, as well as brand standards and local policies and procedures.

Duties and responsibilities

- Up-sell property facilities

- Actively pursue cost saving measures

- Recycle wherever possible

- Liaise with Sales Manager during tender process to obtain new accounts; Food and Beverage specific

- Manage wage and beverage cost

- Forecasting

- Stock control

- Analyze food and beverage statistics through point of sale system

- Works with F&B Manager on manpower planning and management needs

- Works with F&B Manager in the preparation and management of the Department's budget

- Up-sell property facilities

- Conduct effective shift briefings ensuring all staff are aware of VIPs, special occasions, daily specials; emphasis on up selling certain products etc

- Encourage and motivate staff to provide optimum service during all shifts .

- Conducts daily briefings, Food and Beverage meetings and other meetings as needed to obtain optimal results

- Ensure staffs are properly trained on quality and service standards, has the necessary tools and equipment, and is empowered to carry out job duties.

- Create positive publicity opportunities

- Manage customer database and utilize effectively

- Manage special event concepts

- Develop and implement Promotions Calendar for F&B products in restaurant

- Share recommendations and guest comments to Food and Beverage Manager to reflect current customer profile

- Recycle wherever possible

- Oversee the Implementation of standards as detailed in the departmental standards and procedures manual

- Ensure the security and proper storage of food and beverage products, inventory and equipment, and replenish supplies in a timely and efficient manner while minimising waste.

Accountability :

- Supervises a small number of team members in one or two food and beverage outlets and may include banquet facilities. May oversee Supervisors.

Qualifications and requirements :

- Bachelors Degree/ Diploma in Hotel Management or equivalent

- 6+years related experience, including supervisory experience
